Sautéed Dried Anchovies with Dried Bean Curds

Instructions
1. | Rinse the dried anchovies then pat dry with paper towels. |
2. | Prepare the Black Bean Sauce. |
3. | Heat 4 tbs. oil in a pan. Add the dried anchovies and pan-fry over medium heat until crispy. Set the anchovies aside. |
4. | Wipe the pan clean. Place the part A from the Black Bean Sauce in the same pan and sauté until aromatic. Add and boil the part B from the Black Bean Sauce. |
5. | Stir in the dried bean curds and sauté until every slice of the bean curd is colored from the sauce. Turn off the heat; add the fried anchovies and mix well. |

2. | 準備豆豉醬汁。 |
3. | 4大匙油燒熱,放進小魚乾用中火炒酥。盛出小魚乾放在一旁。 |
4. | 鍋子擦乾淨。原锅倒入豆豉醬汁A料爆香,加入豆豉醬汁B料煮滾。 |
5. | 放進豆乾炒到每片豆乾都著色。熄火再加入小魚乾拌勻即可。 |
